Chris, too bad I can't come to the breakfast.  Sounds great.  I have
spent some time in the south, and did some training in Nawlins, but wow
I have never heard of anyone going to the effort of using clarified
butter for their biscuits.  Impressive!

Oreos are the ONLY chocolate "biscuit" in the US all
else are impostors, poseurs, pretenders or
pretentious. They are consumed with milk.

Annie, FWIW, here in the South a biscuit is a
different creature.

They are made with flour, lard, buttermilk, a bit of
baking powder and a touch of salt. They come out of
the oven golden brown, topped with clarified butter,
several inches tall and the size of a cat's head. If
you don't cover them quickly they will float up off
the pan and hit the ceiling.

The version that we will make tomorrow morning for our
Church (Kirk?) Breakfast will include freshly grated
sharp cheddar cheese and be consumed with fresh
country sausage, salt cured country ham, grits and
free range eggs to order along with fresh orange
juice, milk and coffee that walks on its own and barks
but never bites. For those requiring a bit of sweet,
molasses, strawberry preserves and grape jelly will be
on the table.

For the nautical epicures, these biscuits can be
easily made aboard and cooked in the oven when cool or
in a covered iron skillet on the grill when the
weather is hot. This must be done judiciously as the
smell has the unintended effect of causing your sleepy neighbors to
inadvertently walk off of their decks in a close anchorage.
