Len,
When close hauled, I shoot for only a very slight belly in the sail and
rely on the slot effect created by the genoa.
The stronger the apparent wind, the flatter we try to make them on all
points of sail.
I shoot for the greatest belly in the main sail when on a beam reach in
light to medium air, and flatten it as I go towards any other point of sail.
But then, I'm not a racer... :)

I'm sure Orlando will agree, you need a flat sail on broad reach and a well
curved sail on close haul, the greater the curve the greater the Bernoulli
effect.
