The answer is in your last line.  "The boat is surprisingly well
balanced."  OK, in the late Spring to early fall the typical wind is
15-20 knots, with days of 25 and higher not unlikely.  In the winter we
get two types of conditions:  very light air or very stormy--in between
is usual for San Francisco Bay in the winter.  Thus the 100 is flown
during the late Spring to early Fall and then the switch.

Geez Adam:  If you don't switch to the 100% in 40 knots, when do you 
use it?  The only point of owning a sail like that is to use it in high 
winds.  The one time I tried to sail my 320 in winds that strong I 
didn't use any headsail at all.  But then I only have one reef point in 
the main.  The boat was surprisingly well balanced.
