Adam, 

I'd think that unintentional jibes are less likely the farther out the main
is.  However, the farther out the boom is, the greater the potential damage
if you do jibe (unless you're quick on the mainsheet and the tiller).

We've always found that running 160 or 200 degrees instead of 180 gets us a
lot more boat speed.  We watch the VMG to waypoint to determine whether
we're doing better dead downwind or by heading off some.  In high wind, if
wing-wing or just the main gets us close enough to hull speed, we don't
bother heading off.  We find that running in lighter air, the difference is
much more pronounced between dead downwind and heading off.  (heading off is
much faster)   

In order to run wing and wing effectively straight downwind in 10-12kts wind
without a pole, we typically put the main out to very far, sail slightly
by-the-lee and keep a very close eye on the wind.  This seems to direct the
wind off the main and keep the Genoa full.  But you can't get sloppy or
you'll get punished and have to go to West marine to get new stuff. :)

Dick,

Are you saying that the performance sailing at 165 relative with 
occasionally jibing to reach a location dead down wind is better than
using 
a whisker pole and sailing direct downwind using wing to wing?
