The traveler isn't centered, the boom is.  The combination of main
sheet tension and traveler position are used to center the boom and
adjust the twist in the leach.  The stronger the wind, the more twist
you want (to depower the main), so the higher the traveler goes, and
the looser the sheet becomes (dropping the boom to center and twisting
off the top of the main).  You can then use the traveler as an
accelerator ... after a tack, leave it down on teh new leward side for
power, then bring it up to center the boom as the boat accelerates at
improve your point.
