Don's Sail Trim charts are great and give some excellent insight on
trimming....keep in mind that a couple of things on his chart are slightly
different on our boats...in other words, experiment

  Ya.... I was waiting for someone to jump on my ignoring the vang in
my reply. I left it out because it can be left out of the picture (at
least for us cruisers) until the reach turns  into a run, the traveler
is leeward as far as it can go (or not), and then because you Have to
ease the main sheet to get the boom farther to leeward the only thing
left to hold down (if you want to) that sheeted out boom is the Vang.
Just trying to keep it simple (for me too) and as Orlando suggested -
reading up on it is the best way...... and to keep it in the Catalina
family Don Gillette of C30 fame... has some good stuff out there on Sail
Trim. Speaking of vangs I have to cobble up something to keep the boom
down for deep reaches and runs on my traveler-less and vang-less (a vang
would hit me in the head at the wheel) mizzen on my NC331 so I don't
embarrass myself out on the bay looking for IP's or something like that
to pester.... :>)

Stan, we can cheat and vang sheet.  That allows us to use the main
sheet to adjust the boom position, use the vang to adjust the twist,
and lock the traveler on center.  When I'm on a run, it's easier (and
quicker) to get good sail trim that by vang sheeting than it is to
adjust the traveler and the main sheet.  In addition, when we round
the
leward mark, we only have to adjust the main sheet quickly as we can
pre-position the traveler to the expected upwind position.
