Mike,
While it will cost more I recoomend that you get two faced(that is a good thing) marine grade plywood.  Preferably at least 7 layers.  Nothing worse than doing a nice plywood project only to have it delaminate in a year.  Dinghy floor is tough duty as when in use parts of it are always wet.
