Warren, commercial dishwashers are in that temperature range.  180 degrees
really isn't that high and boiling water does not break down into it's
component parts of hydrogen and oxygen.  Further, although I usually wash
dishes after returning to dock I often don't and I have never developed a
smell in the heater.

In hull 218 (I have owned for nine plus years) we have never had a smell.
One thing I insist on though is to run through the tanks.  Basically I go
through each tank about six times a year.

By the way, super heating water is a way of treating bacteria problems,
and
isn't known for creating smells.

Sounds like the tanks involved need some chlorine treatment and a lot of
flushing.
