Brian,
Let me see if I can answer some of your questions here:
* The best thing to do is get an autopilot. When single or double
handed (or if I want to have fun), I can have the autopilot do the
steering work when trimming the sails or tacking or gybing. It is
very easy and works well.
* I did add a second set of winches, but for a different reason - the
second set is for the spinnaker lines. They are behind the first
set. If you are running spinnakers you will need it for the most
part, though I guess for basic cruising you could pack-up the genny,
then fly the spinnaker using the same winches. Not great for racing
and not a good general option. And yes blocks were added for the
Spinnaker.
