Thank you all for your responses. The boat came with fitted sheets so I'm thinking the Travasak is the way to go.
This site is a wealth of info - hopefully I can contribute in the future.

Congratulations on the new boat Bob.

Another bedding option (not as nice as custom mattresses but a lot cheaper) that we used is the Travasak. It is essentially a glorified sleeping bag but with the following benefits:

1. Queen size fits the master berth. They also have a v-berth size
2. Sheets come with it and are attached with internal velcro strips. No more making up the bed and the sheets are easily removed for washing.
3. Each side has a different thickness so you place it with thinner side up for summer use and thicker side up for winter use.
4. Microsuede option. 

It doesn't provide much cushioning/support if that is what you are really after but looked like a good answer for our needs.
