You probably damaged the duckbill valve in the anti-siphon loop when you
ran the pump with the through hull closed. That is what that "popping"
noise was when you started the pump. Someone else reported the exact
same experience earlier this year.

Once it's blown it's going to leak whenever you run the shower sump
pump, whether it's to drain the ice box or the shower sump. You can buy
a replacement cap assembly, which includes the duckbill valve, at West
Marine. It's made by Forespar.

And yes, the duckbill valve is part of the screw off cap of the plastic
"U", which is your anti-siphon loop. The purpose of this device is to
close whenever pressure exists in the circuit, but also to let air into
the hose if suction ever develops, which could cause water to start
siphoning from the thru-hull into the boat. However the rubber valve
can only withstand so much pressure before it fails, which probably is
what happened in your case. And once it fails, it no longer can close
to keep water from leaking out of the hose under pressure.

There is a second anti-siphon loop for the head intake in the same
locker, and a third one in the port cockpit locker that is for the
engine cooling raw water circuit. But since there is no way to close the
outlet for either of those circuits, you are unlikely to ever blow the
valve except on the one for the shower sump.
