Just to add to this…
I discovered that when you use a water based varnish on teak you end up with a much lighter wood colour than when using a solvent based varnish. Personally I really like the lighter wood colour that the interior of the Catalinas have and ibelieve this is down to the use of non solvent based varnishes.
I re varnished my companionway steps last winter with solvent based varnish, thinking it would be more robust and wear beter when being walked on but the end result is a much darker finish more like the interior of many other boats
