The check valve is (I believe) Whale quick connect part # WX1534(B) shown here: http://www.catalina320.com/filemgmt_data/files/WhaleFittings.pdf

I got one from either West Marine or Defender

The check valve was delivered from the factory.

If your pump is running with no hot water in the heater, then you start motoring or turn on the electric water heater, the check valve is to prevent your pump from seeing excessive back pressure. I can't really see any harm, but if your pump is set for x lbs, the pressure could be increased in the rest of the system as a result. Excessive pressure buildup in the hot water heater normally is vented through the overflow instead of out to the rest of the water system.

Now, how important that really is, I can't say. But generally you don't want hot water backing up and feeding the cold water system, especially given that it's really close to the galley sink because in some scenario, it might be possible to turn on the cold water in the galley and get scalded. Not sure, haven't thought about it enough yet.

That check valve may be part of a winterizing scheme where it allows, in conjunction with a 3-way valve, the easy bypassing of the Hot Water Tank.
