I did the same thing a number of years ago and finally installed AC last
year. I installed a bronze seacock between the starboard stringer and the
stuffing box and aft of Racor filter location. I can easily access it and
the engine cooling water seacock at the same time. It was easy to run
coolant lines from there to the port side space under the aft bed panel
where the freshwater system pump and valves are located and where I
installed the AC coolant pump. It was also easy to run the necessary wiring
and coolant lines from there into the port cockpit locker where I installed
the AC unit.

FWIW, I installed a 5K BTU unit contrary to conventional wisdom. It has
proved adequate to cool the boat at night and can be run from shore power,
a small generator or even an inverter.
