We tape ours up for the season, always leaving space for water to drain out etc., and remove over winter to inspect

I've heard stories about stays coming loose when a sheet snagged on a cotter ring and pulled it out, allowing the clevis pin to work free, and I've seen this happen myself on less critical hardware such as a mainsheet block. I will stick with cotter pins for anything holding up the rig. As long as you only bend them just enough so they don't back out (say 10 degrees) which is all you really need, they are easy to remove with pliers, and also to re-use.
