Yes, it is possible to replace the GFO while the boat is in the water.
When I do it I wrap a shop towel around the area to slow the incoming water down. Water still comes in but it helps. Just make sure you have all of your tools in place. Also pre size and cut the GFO so it's ready to install.
It's not as scary as you might think.
If it was me I would remove all the rings and reinstall new ones while I was doing it as it wouldn't take that much longer. Don't forget to stagger the seams where the GFO meets to cut down on leaking.
