If chunks of the shaft coupler have rusted off, that's truly no bueno.
 In order to remove they coupler, you could theoretically unbolt it from
the transmission flange, use a coupler puller to pull the coupler, purchase
a new coupler and reinstall it all without hauling your boat.
Unfortunately I would not reccommend this approach.

The problem you may run into is skipping the step of facing the coupler to
the prop shaft.  If you don't have this done, it may be impossible to get
the prop shaft aligned which will lead to vibration and shaft whip which
then leads to all sorts of other problems.

The best approach would be to purchase a new shaft, coupler and sleeve
bearing and then haul out and replace all these items.  Figure about $500
give or take for all the parts.    The association has all the tools you
will need you just pay shipping.   Assuming you can sneak the shaft past
the rudder this whole job can be done in a day, and even faster if you are
already experienced with the tools.
