I find the easiest way to strip old varnish is a heat gun. 

Regarding my repair - unfortunately the piece that split off was lost so I am having to make a new piece to glue on. Hence need to know the wood type!

Regarding staining. I have never stained any of the wood on my boat but I find that if using a water based varnish the natural colour barely darkens. With a solvent based varnish it goes a much richer darker colour
