I use my second reef all the time in day sailing. I think the issue is
not the length of time sailing, I think the issue is where you sail.

As a cruising sailor, not a racer, I find the option of a second reef
reassuring. I think the second reef is more likely to be used on long
cruises, rather than day sailing. On my previous boat (C30), I used the
second reef fairly often. For example, we got caught in an unpredicted
weather system when sailing from Pensacola to Sarasota and we sailed all
day and night at hull speed with a double reef in the main and a storm
jib.
However, in eight years of sailing on the Chesapeake, I only remember
using the second reef on two occasions. Both times involved weather
systems moving in overnight while we were at anchor. Both times I put in
the second reef and hanked on the storm jib before I left the anchorage
and was glad I had done so when I got out of the anchorage.
On my C320, I have continuous reefing (in the mast) and often sail
with the equivalent of a second reef - because it is so easy to do so.
