I'm not JD, but the correct (and smart A$$) answer is;

"Whatever it takes to get you up to hull speed."

Assuming you were looking for a quantitative answer,
that will be very individualized and variable due to:

True displacement (loaded)
Location of cargo aboard
Apparent wind direction
The sea conditions
Condition of the boat's bottom
Sail trim
Sail condition
Experience
Attitude
Lethargy level
and so on and on.
