Steve,
On whether or not to go with a dodger--I sailed my last boat without a dodger for 3 years here in the Northeast. When purchasing the 320 having a dodger was a must. One of the best 'comfort' additions to the boat in my opinion. It really makes a difference when one wants to get out of the wind.
As someone else posted, not sure if the strataglass is the same material as eisenglass, if it is it's much more durable than the standard vinyl. Also, being able to open up the center is a great addition. Haven't had any real issues without handholds, but I guess the more the better....good luck and congratulations!
