Allan, Thanks for correcting me, I said tack when I meant gybe,
We have been using a single sheet system for gybing just to eliminate the
wrap possibility.

If you have an autohelm, you might try to have the boat gybe using either
the +/-1 and +/-10 together.
I know #851 with the ST4000, it tacks the boat slowly and it might gybe the
boat slowly enough for you to handle both sheets if you single hand
