Its odd that the fridge started to run when you connected only one wire.
That would point a wiring problem. If the lead you connected is grounded the
fridge control unit might see it as a demand for cooling.  Take an ohm-meter
(with the thermostat disconnected) and check each thermostat connection to
battery ground.  Both connections should be high resistance.
