[C320-list] Yammar runs below normal operating temperature

I have a Yanmar 3GM30F that does not run at normal operating temperature
which, I believe, is 180 degrees.  It gets close to that on warmup and then
drops down and hovers well below that at around 90 to 120 degrees all the
time we are motoring.  I've changed the thermostat with a new Yanmar part
that is the correct number.  Anyone else experience this?  Any suggestions
on what to do?
