Hi Jim,
Just did it on ours. You will need a foot of 3/8 x 3/8 packing material. You will need a 1 7/8 wrench to separate the nut and keeper.
It is quite easy to do. While I did it about three litres (quarts) of water came in, and I stuffed a rag around the shaft.
The thru-hull actually has a rubber sleeve that holds the threaded part of the gland. Our packing nuts unthreaded forward.
You 'crack' the keeper towards the aft [large channel locks along with the wrench helps]. Then the nut unscrews forward.
You will have to pick the old material out. There are three layers. Cut the new material on a diagonal with a little extra.
Try it around the one inch shaft and trim to fit. Pack it in with the handle of a spoon [or something blunt]. Repeat. Repeat.
Tighten the nut back down but not too tightly. It does need to weep just a little. You can also tighten it a bit more over time
as it wears in.
