With a conventional spinnaker, it's hard for us to be competitive with less than five crew, and six or seven would be my preference. We can set, fly and douse the sail with four in light air, but we lose time at the marks and there isn't enough weight to sail the boat flat going upwind. Optimum performance is 10-14 knots with 7 crew. But it's good for everyone else, too, and we lose time at the leeward mark in particular, trying to get the genoa up, spinnaker down and main trimmed for upwind speed. We have two jib halyards and two spin halyards, so maybe we need to experiment there.

My husband and I have raced, just the 2 of us, in light winds. We've found, that to be competitive in a racing situation, things must happen quickly and there must also be time to strategize, read the conditions etc. All this is too hard to do with just 1 person aboard.
