Going the other way, we removed our rarely used microwave a few years
ago and I put a teak fiddle across the front of the opening to keep
things in place, given that we don't have a cabinet door there. We
really like the extra galley storage in a very convenient location, and
for us it is also now the home of the coffee maker and coffee pot. We
mostly used the microwave to store things like oven mitts since we do
not have an inverter and are rarely on shore power. The microwave lives
in our basement waiting for the day we eventually sell the boat since a
future owner might want it.

I put a couple small hooks and stretched shock cord between them and keep my coffee maker, coffee pot and other kitchen goods in that area. I am up for trying a microwave now.
