I'm with Bruce.  Coating stainless steel bolts with Zinc seems like an odd
suggestion.   In air it would be counter productive as it is the
passivation of the stainless that keeps it from corroding, put a coating on
top would seem to invite a crack in the paint that would lead to crevice
corrosion.   AFAIK the keel bolts  are purposely designed and installed by
the manufacturer to handle having water on them as a fully dry bilge isn’t
even feasible in some of the earlier models that drain the fridge to the
bilge. Having said all that, I’m not a metallurgist and I don’t know the
implications of zinc painting stainless for underwater applications.   I
think if your were going to coat with zinc something more permanent like
electroplating would be preferred and in that case now you are talking
about removing keel bolts and I would highly recommend not doing that.

Maybe just glob some Lanacote on the bolts?
