I think you made very good points about the newer instrument displays where all is combined (and you may then lose all info from a failure). My instruments system is old that we inherited on our 1994 boat, but all is luckily working (separate autopilot, depth, water speed, wind).  However, compared to your shrouds yarn "wind instruments",  I would be disappointed now not to have my electronic wind instruments (direction/speed).
