The procedure is pretty well documented by Jeff Hare on the C320 website
I followed his lead and it can out perfect. He and I chose the polished backing plate for the internal side as shown in this link BUT I'd have saved a couple of bucks with a simple aluminum plate cuz frankly it's at my feet in the quarter berth and doen't have to be too cute.
You will also need to buy and shorten a Edson rudder arm the attaches to the rudder post and links the am arm AND you'll want the rudder positioning sensor (#1037 already had it from the wheel Auto setup) AND you need the newest EV1 Core sensor AND the New Control Head which will require NEAMA 200 or the latest SeaTalk upgrade

Subject: [C320-list] Another Autopilot question
I have a Raymarine EV-100 (Wheel type) Autopilot and was wondering what it would take to convert to the piston type? I added it new in 2015. (If) we decide to keep our C320 then that is one of the enhancements we want to do.
Tried to register to ask Raymarine directly but (so far) I can't register. They might just try to upsell me so asking here first.
Thanks,
